Ingredients for
Pancake Batter:
Dry

2 cup
maida (Refined flour)
Refrigerated
·
3 eggs (u
can use 2 eggs )
Dairy Products
·
Milk to
mix (You can use water even)
Other
·
Vanilla
essence
·
Any food colour of your choice
Ingredients for
Filling:
Vegetables:

1 Coconut
grated
Spices:
·
Cardamoms
for flavour ( You can also use power about ¼ of a tsp)
Dry
·
¾ cup
Sugar or adjust to your taste
Dry fruits
·
Cashew
nuts chopped
·
Raisins
Method:
For Filling:
1) Cook the grated coconut with sugar &
colour on low heat till the sugar melts.
2) Add cashew nuts, raisins and cardamom powder and mix well.
Method:
For Batter:
1) Beat the egg.
2) Mix the maida, eggs, milk or water to a
fairly thick pouring consistency.
3) Take it of the flame and add few drops of
food colour.
Method:
1) Take a small non-stick pan. Smear the pan
with oil (using ½ potato/onion on a fork).
2) Put in a little batter, Swirl the pan so
that the batter covers it.
3) Cook for a minute or so and then turn it
over on a board. (Repeat the process till all the batter is used.)
4) Put approx 1 tbsp of coconut filling and
roll up the pancake tight or u can even seal edges & roll.
Serves: 10-15 people
Should be served at room temperature
