Carrot Halwa

Since it is the seasons when carrots are found in plenty do try the carrot halwa.


Most loved Indian sweet dish. 



Ingredients
Vegetable
·         8 – 10 medium size carrot
Dairy products
·         Pure ghee – 3 tblsp
·         Milk- 2 cups
·         Mawa- 1 cup ( dried whole milk/thickened milk)
Dry fruits
·         Cashewnuts chopped – ¼ cup
·         Almonds  - as required
Spices
·         Green Cardamom powder- ¼ tsp
Dry
·         Sugar – 1 cup

Method:
1)      Wash, peel and grate all the carrots.
2)      Wash raisins and pat them dry.
3)      In a thick bottomed pan add pure ghee and let it heat, to this add the grated carrots and sauté for 5 minutes.
4)      Add milk and green cardamom powder to it and let it cook on medium flame for 5 minutes or till the milk evaporates and the carrots are cooked.
5)      Now add in the mawa and sugar, cook it for 2 to 3 minutes till the sugar melts.
6)       Garnish with chopped cashewnuts and almonds.
Servers: 10 - 12 People
Can be served cold or hot, according to want.
